Peanut Poha

Indian food is a perfect combination of taste and flavor. A good, nutritious and delicious breakfast can make your day and give you that much required boost of energy to keep you going throughout the day. This is a very popular breakfast dish all across the India


Have you heard of Poha? What is poha you ask? Parboiled rice which is rolled, flattened and dried rice or simply rice flakes.



Ingredients

  • 1 ½ cup medium thick Poha (flaked rice)

  • 12-10 curry leaves

  • 1 tsp mustard seeds

  • 1 tsp cumin seeds

  • 1/4 tsp asafoetida (optinal)

  • ½ tsp turmeric

  • 1 or 2 green chilli chopped finely

  • 1 tbsp fresh lemon juice

  • 1 tsp salt

  • 1/2 onion finely chopped (optinal)

  • 1/4 cup peanuts

  • handful of finely chopped fresh coriander & some shredded coconut ( fresh if available)


How to make

1. Heat pan and pour in the oil, once heated, lower the flame and add in the mustard seeds wait till you hear popping sound or see mustard seeds dancing.


2. Once mustard pop add the asafoetida, chillies, onion, curry leaves, peanuts and saute.


3. Simultaneously put the rice flakes into a bowl and cover with water for a minute. You can see the change in texture and it will turn soft. Drain water completely using a strainer and rinse with water and set aside.


3. Lower the flame and add in the turmeric and salt and lemon juice. I also add a pinch of sugar, but it is totally optional.


4. After onion turn translucent add the poha, give it a mix, cover it for 3/4 minutes. Turn off the heat and lastly sprinkle in the fresh fragrant coriander & coconut and a squeeze on the lemon.


I love the textural contrast between the soft, gently cooked, turmeric hued rice flakes and the fried peanuts strewn in them. This dish reminds me of my home every single time.

PS : You can replace peanuts with frozen peas, cashews, carrots and it will be still yumm..
