Mangoes are my favorite fruit. When mangoes are in season and plentiful at the market, it’s hard to resist making mango salsa. It’s so easy!
Ingredients
1 ripe mango, peeled, pitted, and finely diced
2 tablespoons finely chopped red onion
1/2 jalapeño chile, minced
3 tablespoons fresh cilantro leaves, chopped
3 tablespoons fresh lime juice
Pomogranate seeds (Optional) / 2 tablespoons finely chopped tomatoes (Optional)
How to make
Put the diced mango, red onion, jalapeño and cilantro in a large bowl. Toss with lime juice & pinch of salt. For the pop of color add pomegranate seeds or finely chopped tomatoes. Serve with immense joy!
This salsa is really versatile, I use it for taco nights or tandoori tofu pitta during summer ...the perfect balance of zesty, sweet and spicy to add to any dish!
Quick tip : Use ripe mangoes and sharp knife to cut the mango.
